Oatmeal Pancakes with Berry Sauce

Ingredients:

For pancakes:

2 cups old fashion oatmeal

1 1/2 cups plant based milk

1 tsp baking soda

1 tsp baking powder

1 tsp cinnamon

1 tsp vanilla extract

For Berry Sauce:

2 cups berries (choose your favorite, can be frozen)

3/4 cup water

1 tbsp sugar (optional)

Directions:

For pancakes:

  1. Place old fashioned oats in food processor or high power blender and blend until creates oat flour.
  2. Combine in bowl oat flour, cinnamon, vanilla extract, baking soda, and baking powder.
  3. Slowly add plant based milk and stir until batter is runny (may not use all the milk).
  4. Heat skillet over medium-high heat.
  5. place 1/2 cup batter on skillet. Cook until bubbles form or until brown on that side.
  6. Flip pancake and cook until brown on both sides.

For Berry Sauce:

  1. Place berries, water and sugar (optional) in pan.
  2. Turn heat to medium.
  3. Heat until berries begin to release water and soften.
  4. Once juices begin to release, turn off heat.
  5. Use fork or potato masher to mash berries.
  6. Pour over pancakes and enjoy!
