Ingredients:
For pancakes:
2 cups old fashion oatmeal
1 1/2 cups plant based milk
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1 tsp vanilla extract
For Berry Sauce:
2 cups berries (choose your favorite, can be frozen)
3/4 cup water
1 tbsp sugar (optional)
Directions:
For pancakes:
- Place old fashioned oats in food processor or high power blender and blend until creates oat flour.
- Combine in bowl oat flour, cinnamon, vanilla extract, baking soda, and baking powder.
- Slowly add plant based milk and stir until batter is runny (may not use all the milk).
- Heat skillet over medium-high heat.
- place 1/2 cup batter on skillet. Cook until bubbles form or until brown on that side.
- Flip pancake and cook until brown on both sides.
For Berry Sauce:
- Place berries, water and sugar (optional) in pan.
- Turn heat to medium.
- Heat until berries begin to release water and soften.
- Once juices begin to release, turn off heat.
- Use fork or potato masher to mash berries.
- Pour over pancakes and enjoy!
